This is one of the easiest recipes for using a spiralizer. My daughter loves this Asian salad and she called it “noodle salad”. This will appeal to kids for sure! You could cook carrot noodle really quick (you don’t want to overcook) if you prefer soft texture.

1 carrot (use the smallest hole blade to make thin noodles)

1 cucumber (use the straight blade to make ribbon-like noodles)

Rice noodle (prepare as package indicates)

Sunflower seeds (optional)

Oil (olive oil, sesame oil, flaxseed oil…your choice)

Ponzu (citrus-seasoned soy sauce) or any other vinegar of your choice


Mix all together and ready to enjoy!
