Fermented Apple Spice Cake

This cake is very digestible, not just because apples are fermented but also because we are using spices that are helpful for digestion. Great for breakfast with a nice cup of tea!

You need:

  • 1 cup all-purpose flour (unbleached, organic preferred for all ingredients)
  • ½ cup whole wheat flour
  • ½ cup coconut flour (any gluten free flour of your choice)
  • ½ cup quick cook oatmeal
  • ½ tsp each of baking powder and baking soda
  • 1 tsp cinnamon
  • ¼ tsp each of cardamom, ground cloves, nutmeg, and sea salt
  • 2 eggs
  • ¼ cup coconut oil (melted, liquid form)
  • ¼ cup coconut sugar (any organic sugar of your choice)
  • 1 jar or less of fermented Granny Smith apples (how to make it? Click here)
  • ½ cup raisins (optional)

How to make:

  1. 2 loaf pans or 8-inch (20cm) square baking pan, glazed with coconut oil.
  2. In a medium bowl, mix all dry ingredients (except sugar), put aside
  3. In a large bowl, beat eggs, sugar, coconut oil
  4. Stir in flour mixture until blended
  5. Fold in fermented apples (I used blender to make apple sauce but you can use them as is, your preference)
  6. Add raisins (optional, I made one loaf with raisins and the other one without)
  7. Spread in prepared pan(s)
  8. Bake in 350F(180C) oven for 35 minutes to 40 minutes
