One day I needed to pack my husband’s lunch and I didn’t know what to make. There are some eggs in the fridge but he doesn’t like egg salad sandwich…so, I decided to make scrambled eggs. I also found dandelion leaves in my fridge and I created a unique sandwich on the spot. My husband said it was pretty good.
- 2 multi-grain buns
- 1 cup dandelion leaves
- 1/2 cup carrots (thin sliced)
- 1 clove garlic (chopped)
- 1 egg (scrambled egg)
- Salt and pepper for taste
Make scrambled eggs and put aside. Heat 1 tbsp. canola oil on pan. Cook garlic and add dandelions for 1 to 2 minutes. Then add carrots and cook another 1 to 2 minutes. Salt and pepper for taste. Open multi-grain bun and place this stir fry and scrambled eggs.
