You can’t beat Beets!
My garden has been pretty successful this summer and my family and I are enjoying fresh vegetables almost everyday. However, there is a vegetable that I have been noticing but haven’t harvested yet … Beets. Since beets are growing underground, I can never tell if they are ready to be picked or still small. So, I just keep waiting until I feel right and they seem ready.
My husband and I adore this bright red vegetable but my children don’t really appreciate it very much. Beets have numerous heath benefits and is one of the most highly recommended vegetables by health professionals.
Beets are an excellent source of essential nutrients, minerals, and vitamins:
- Folate – for healthy brain function, also reduces the risk of birth defects
- Manganese – for normal bone formation
- Potassium – for healthy kidney functions, nerve transmission and muscle contraction (heartbeats)
- Fiber – for regulating digestion
- Vitamin C – a powerful antioxidant
Other health benefits include: lower your blood pressure, fight Inflammation, anti-cancer properties, detoxification support, boost stamina, aid sleeping issues, help improve cognitive function, and more…the list seems endless.
Moreover, studies on fermented beet juice show that some of the phytonutrients increase in significant amounts. It is also an anti-microbial and helps prevent bad bacteria mutations. Adding fermented foods (or fermented beverages) into your meal is a good idea, because it helps aid digestion of other foods you are eating. It seems like the process of fermentation can bring beets to the next level!
Once my beets are ready, I am planning to make “Beet Kvass” which is a fermented beverage that I haven’t tried before. I am looking forward to experimenting with this new recipe and am excited to share it with you, because it sounds very easy to make and helps improve your gut health.
