Ruby Red Beet Noodles with Creamy Alfredo Sauce

This beautiful “red and white” dish will catch everyone’s eye!

(Makes 4 servings)

4 medium size beets (spiralizer with the smallest hole blade to make thin noodles)

1 jar of alfredo sauce (of course you can make it from scratch, but a prepared jar comes in handy when you are in a hurry. Just add some mushrooms or corn for extra nutrients)

 

Cook spiralized beets noodle, just like when you cook pasta. Taste occasionally to see how hard or how soft you want them to be. Prepare Alfred sauce by adding optional vegetables in a separate pan. Serve sauce on top of cooked beets noodle and enjoy!
