Summer vacation is over and all children have gone back to school. However, the weather is still nice and very hot, just like summer! My family and I are still enjoying fresh vegetables from our garden almost every day. Finally, the last day of summer vacation, I decided to harvest my precious beets that I haven’t touched the whole summer. They looked nice and big and were so ready!
As I mentioned in my previous blog about beets, I was planning to make “Beet Kvass” once I harvested my garden beets. Beet kvass is a fermented beverage that I have been always curious about. So, I am going to introduce this wonderful digestive aid drink that you can make at home.
Beet kvass is a Ukrainian tradition drink that has many health benefits:
- antioxidants and anti-inflammatories
- aids in liver detoxification and supports the kidneys
- works like an anti-depressant
- helps improve cognitive function (may help prevent dementia)
- helpful for hypertension
- helps prevent bad bacteria mutations
Last but not least, like all fermented foods, beet kvass aids digestion of the foods in a meal when you drink it. What a great addition to your diet!
This is the time of the year you can harvest an abundance of garden vegetables or buy fresh ones at a store. It is always a good idea to preserve some in jars for winter time. Currently, I am into fermentation and excited to try “canning” a number of vegetables. I will be introducing some very easy to make fermented foods on my recipe page.
The process of fermentation increases the phytonutrients of foods and also makes foods more bioavailable. I am just amazed by the idea of fermenting foods and how valuable to be added to everybody’s diet.
